UW Farm Sees Record Numbers of Student Volunteers

Hi all! As we enter the fall quarter I want to take an opportunity to look at the students that made up our 2023 volunteers and the many majors they come from. 

When I came to The UW Farm for the first time I was shocked by the many majors that interact with the farm and the many avenues through which students discover this farming space. Something so special for students is not only the educational opportunities offered, but also the space for connection between students and non students alike. Every shift people work together in groups of people they may have just met. This exact situation is how I've met friends, peers, and even made some job connections. 

Below I charted our 2023 volunteers (Winter through Fall) by college at UW, and charted the top colleges by major. It's quite interesting seeing where the students come from and potentially surprising from an outside view.

Beet and Potato Salad Recipe

Ingredients:

  • 3/4 pound potatoes
  • 2 large beets, roasted
  • 1 celery stock, diced (could be substituted with carrot, leek, or green bean)
  • 1/2 small red onion, minced
  • 2 hard boiled eggs, peeled and chopped, or silken tofu
  • 2 tablespoons minced chives or green onions
  • 2 tablespoons champagne vinegar, sherry vinegar, red wine vinegar, or apple cider vinegar (any works!)
  • 2 teaspoons dijon mustard
  • 1/4 cup olive oil or avocado oil
  • 1/4 plain whole milk or vegan yogurt
  • Salt and pepper to taste

Steps:

  1. Cut the potatoes into halves or quarters and steam over 1 inch of boiling water until tender, 15 to 20 minutes. Remove from the heat. When cool enough to handle, dice the potatoes into small pieces.
  2. Peel the beets and finely dice. In a large bowl, combine with potatoes, celery, onion, eggs or tofu, and chives.
  3. In a small bowl, whisk the vinegar, mustard, and salt together. Whisk in the olive oil and the yogurt. Toss with the beets and potatoes. Add freshly ground pepper, taste and adjust salt.
  4. Serve immediately or refrigerate for later!
